You can swap covers using the lightning bolt icon in the lower left corner of any book cover, the lightning bolt in the quick editing stripe or the lightning bolt in the full editing area of Book Covers.
Once you click the lightning bolt, you'll click the new cover in the covers section to the left to replace it.
